Apple-Butterscotch Brownies

Hello Friends! Well it’s the baking season! I love all of the apple and pumpkin recipes out there…. I made some delicious Apple-Butterscotch Brownies for dessert the other day and thought I would share the recipe with you. It’s an easy recipe and most likely you’ll find that you already have most of the ingredients in your pantry.
Recipe:
1 cup chopped Pecans
2 cups firmly packed dark brown sugar
1 cup butter, melted
2 large eggs, lightly beaten
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3 cups peeled and diced Granny Smith apples ( about 1 1/2 lb)
Preheat oven to 350 degrees. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through.
Stir together brown sugar and next 3 ingredients.
Stir together flour and next 2 ingredients; add to brown sugar mixture, and stir until blended. Stir in apples and pecans. Pour mixture into a greased and floured 13 x 9 inch pan; spread in an even layer.
Bake at 350 degrees for 35 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool completely ( about 1 hour). Cut into bars.
Side note: I substituted walnuts for the recipe and used a mixture of Granny Smith and Gala apples I had on hand…..turned out delish. Recipe adapted from Southern Living Magazine / September 2011 issue.

these are worth every calorie that is in them! they were wonderful. don’t skip the step on roasting the pecans. it adds to the recipe.
We made these last night but they just never fully cooked, the middle was so mushy…did you have this problem? How long did you cook yours for? The taste was wonderful but just not convinced I’ll try them again.
