Apple Pie Oatmeal

Chilly mornings call for a nice bowl of hot oatmeal…that’s exactly what I had this morning.  I found this yummy recipe for “Apple Pie Oatmeal on “skinny kitchen.com” and couldn’t wait to give it a try.

Apple Pie Oatmeal

Ingredients:

1  Tbsp. reduced-fat butter

1  1/2  cups apples, peeled and chopped

2  tsp. cinnamon

2  pkg.  favorite sugar substitute

3  Tbsp. water

1  cup old fashioned rolled oatmeal

1  3/4 cups water

1/3 – 1/2 cup fat-free milk, to taste

1  pkg.  favorite sugar substitute

1/4  tsp. cinnamon

Instructions:

In a small nonstick pan, melt butter.  Stir in apples, cinnamon and sugar substitute.  Add 3 tablespoons water and mix well.  Cook over medium-low heat, stirring often until apples are softened, about 10 minutes.

In the meantime, cook oatmeal according to package directions but no need to add salt.

When apples are ready, stir into cooked oatmeal.  Stir in milk, 1/4 teaspoon cinnamon and 1 package sugar substitute.  Continue to cook on low heat until hot.

Makes 2 servings.

Healthy and super yummy – gotta love that!

    Oh yummmmm. That looks and sounds so good and good for you. What a great breakfast. Always love to find new ideas for meals. I’ve saved the recipe and will have to have hubs make it for us. He’s the cook now days at our house.
    I did it for years and but since all (4) the kids left I lost interest in cooking. Besides when I’d be cooking hubs would be standing next to me directing everything I did, almost taking whatever utensil I was using out of my hand. So instead of killing him or getting a divorce he does the cooking. Works for me, him too. Cracks me up when he complains about not knowing what to fix for a meal now and then. I ask him how he’d like to have to please 5 people.

    Moni. That. Sounds. Delicious! I get up every morning and make my husband a bowl of old fashioned oatmeal every morning before getting the kids up. He has to go in early, so that’s our alone time before the house is fully awake. He has it the same way every time, but I might just sneak this in one morning and see how he likes it. I know I would!
