Apricot Orzo Salad

Tis the season….for entertaining and good recipes. This is one has become one of my favorite dishes to serve at home when friends stop by. It is so easy to make and ready to serve when you are.
Apricot Orso Salad
Ingredients:
1 (7-oz.) pkg. orzo pasta
3/4 cup diced dried apricots
1/2 cup dried cranberries
1/2 cup chopped green onions
1/2 cup chopped cilantro
1/4 cup rice vinegar
1/2 cup olive oil
1/2 tsp. salt
1/8 tsp. ground black pepper
Instructions:
Cook orzo pasta according to package directions; drain, and place in large bowl. Chop apricots and add to the pasta along with the cranberries, onions, and cilantro. In a jar with a tight fitting lid add oil, vinegar, salt, and pepper. Shake well and pour over contents of bowl, mixing well to coat the pasta.

Moni, this looks delish! I’ve never had orzo pasta or used rice vinegar! I bet its really good with the dried apricots and cranberries! I am going to make this the next time we have our ladies bible study at my house! They LOVE to try new things!
