Asparagus Ham Quiche
I hope you had a blessed Easter. On Sunday we went to the early church service, afterwards the two of us enjoyed a nice brunch and then it was time for my husband to go to work and I found a couple of projects in the backyard to keep me busy. One of the items served at brunch was asparagus ham quiche, so easy to prepare and quite tasty. I found the recipe here. This might come in handy if you are trying to figure out what to do with your ham leftovers.
2 packages ( 10-oz. each) frozen cut asparagus, thawed
1 pound fully cooked ham, chopped
2 cups (8-oz.) shredded Swiss cheese
1/2 cup chopped onion ( I used green onion)
2 cups milk
1-1/2 cups buttermilk baking mix
1 Tbsp. dried parsley flakes
1/4 tsp. pepper
In two greased 9-inch pie plates, layer the asparagus, ham, cheese and onion. In a medium bowl, beat eggs. Add remaining ingredients and mix well. Divide mixture in half and pour over asparagus mixture in each pie plate. Bake at 375 degrees F for 30 minutes or until a knife inserted near the center comes out clean.
