I’m enjoying some Banana Nut Bread for breakfast this morning, that and a nice cup of coffee should get my day off to a good start. I’m sure many of you have a favorite recipe for using up some of those really ripe bananas. The recipe I’m about to share is pretty basic, moist and yummy. If you’re not a big fan of nuts you could easily leave them out. Hubby likes his banana bread with nuts in it.
1/2 butter (softened)
1/2 tsp. soda
1/2 tsp. salt
3 ripe bananas, mashed
1 cup sugar
2 tsp. baking powder
2 cups flour
1/2 cup pecans (chopped)
Add all ingredients, except flour, together. Add flour and 1/2 cup of pecans. Mix all together. Bake 1 hour in loaf pan at 350 degrees.
