We found a fresh produce stand today and loaded up on some fruits and vegetables. Trying to eat healthy, now is a good time to get started! The colors of the fresh produce were amazing as was the taste of fresh tomatoes, corn, onion and cucumbers. We planted several varieties of tomatoes on our Tower Gardens and we had some harvest but, the birds and wild bunnies helped themselves to a lot of the ripened veggies. So frustrating! Looking at all of the pretty colors of the veggies that we carried home today got me in the mood to make this colorful Confetti Corn Salad…super easy and virtually fat free.
2 cups frozen corn
1 ( 15-oz.) can black beans, drained, rinsed
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1 bunch (4-5) green onions, sliced
1 cup celery, sliced or diced
1 cup medium salsa
1/2 cup fat free Italian dressing
1 packet sugar substitute
Microwave the corn for five minutes on high. Combine corn with the black beans, peppers, celery and green onions. Mix the marinade of salsa, Italian dressing and sugar substitute and pour over vegetables. Cover and refrigerate until served.
