Easy Caramel Frosting

Hi Friends!  I hope your holiday weekend is still going strong, ours was a bit short because hubby had to work this weekend. However, on Friday we spent lots of time outdoors enjoying the sunshine and fresh air….it was a perfect day!  We grilled burgers that evening and enjoyed some yummy desserts, Blue Bell vanilla ice cream with chocolate topping and I also made a white cake with caramel frosting.  I had all of the ingredients on hand and it was super simple to make. One of my favorite ways to eat a white cake (from a mix) is with homemade caramel frosting.  So, that is what I did,  I prepared the cake mix according to the box and topped it of with a creamy frosting.  This is a great way to serve a semi-homemade dessert when you’re in a pinch and don’t have time to make all of it from scratch.


Caramel Frosting Ingredients:

1/2  cup butter

1  cup brown sugar

1/4  cup milk

About 2 cups powdered sugar

1  tsp. vanilla


Melt butter in saucepan, stir in brown sugar.  Cook and stir over low heat 2 minutes.  Add milk, continue stirring until boiling.  Remove from heat.  Cool to lukewarm.  Put into small mixer bowl, add sugar and vanilla while beating on medium speed, then beat on low speed for one minute.  Ready to spread on cooled cake.
