Pear Crisp

Quick and easy recipes always get my vote. Like this one from Paula Deen – Pear Crisp, perfect for this time of year. Just so happened that I had some fresh pears on hand that needed some attention but you could use apples instead.
So yummy ~ fresh out of the oven….some ice cream or whip cream would really top it off!
Ingredients:
6 large pears (about 2 1/2 lbs) peeled, cored and thinly sliced
1/2 cup warm water
1 lemon, juiced
2 cups rolled oats
2 cups all purpose flour
2 cups brown sugar
2 TBSP ground cinnamon
2 1/2 sticks butter, melted
Directions:
Preheat oven to 350 degrees F
Combine pears, water and lemon juice in a 8 x 8-inch baking pan. In a bowl combine oats, flour, sugar and cinnamon. Pour in melted butter and stir to make a crumbly mixture. Spread the topping evenly over the fruit. Bake for 45 – 55 minutes or until the topping is crisp and browned.

This sounds so yummy! I’m pinning it and will get to making it hopefully soon! My son has a dairy allergy so I will use Smart Balance or something similar, but now I’m wondering if you think coconut oil would work in this recipe. Any ideas about how that would do flavor-wise?
