Pistachio Bundt Cake

Time spent in the kitchen has been at an all time low for me lately….just ask my husband!  So, for a fun surprise I baked this Pistachio Bundt Cake. Easy recipe, I had most of the ingredients on hand except the pudding; and  after returning home from the grocery store, pudding in hand I began to bake up a storm.

This is what you’ll need:

Bundt Cake

Ingredients:

1  yellow Cake Mix

1  (3.4 oz.) pkg. instant pistachio pudding mix

4  eggs, beaten

1/2 cup  oil

1/4 cup  water

8-oz. container sour cream

1/4  cup sugar

1  tsp. cinnamon

Instructions:

Combine first 6 ingredients in a large bowl; mix well.  Pour into greased bundt pan set aside.  Mix sugar and cinnamon together and sprinkle evenly over top.  Bake at  350 degrees for 45 to 50 minutes.

Bundt Cake 2 The cinnamon/sugar crust will be on the bottom of the cake.

Bundt Cake 3 This is an excellent cake to serve as a breakfast sweet….perfect companion to enjoy with a cup of coffee in the morning.

    Another variation; is to sprinkle powdered sugar on top after
    it cools. It looks real pretty for a Mother’s Day brunch.

    I am sorry I used my previously unused bundt pan for a craft project now. This looks Yummy. I love the crust on a cake – it’s my favorite part!
